Soybean pork knuckle (home cooking)

Cut the pork knuckles into a pot under cold water, add 2 slices of ginger and 20 grams of cooking wine, skim off the floating dust and cook for three minutes after boiling over high heat, remove the pork knuckles and soak them in cold water (ice water) for 10 minutes, drain and set aside

Add oil and rock sugar to an iron pot and heat over medium-low heat

Once melted, reduce heat and stir constantly

Caramel color, immediately add the pork knuckle and stir-fry

Add light soy sauce, dark soy sauce and oyster sauce and stir-fry for one minute, add water, bring to a boil over high heat and continue to cook for another three minutes

Put the soaked soybeans, a slice of ginger, peppercorns, cloves (or star anise) in the electric pressure cooker

Move the pork knuckles from the iron pot to the electric pressure cooker, skin side down, and add the broth in the pot

Press for 30 minutes and simmer for 30 minutes
