【Late-night cafeteria】 Egg sandwich
The food from Nami Iijima's "Taste of Late Night Cafeteria". Serves 3-4 people

Allow the butter to soften at room temperature.

Take a small pot of water and bring it to a boil, add the eggs, and cook for 11 minutes. Remove the supercooled water, peel off the eggshells and chop them.

Drain the chopped onion with water.

Place the chopped eggs in a bowl, add 3-4 tablespoons of mayonnaise, a pinch of salt, a pinch of pepper, and chopped onion that has strained excess water and mix well.

Butter the toast, divide the ingredients from the previous step into 4 equal portions, and place an egg filling between the two slices of bread. Makes 4 servings of sandwiches.

Wrap the toast in plastic wrap and let it sit for 15 minutes to absorb the flavor, then cut it into sizes.
