Peel the loofah, cut it in half and cut it diagonally as shown in the picture

Add a teaspoon of salt and grasp well to prevent the loofah from oxidizing

Wash and drain the shrimp, add 1 tablespoon of cooking wine and marinate for 10 minutes

Heat the oil in a pan over high heat and beat 2 eggs into the pan

Reduce the heat to low, pour the scrambled shrimp and eggs and start seasoning: add another half teaspoon of salt, a pinch of sugar, white pepper and monosodium glutamate

Stir-fry evenly over high heat, and finally hook an appropriate amount of thick potato (about 1/3 small bowl is OK)
