Brunch brunch|Bread killer Catalan baked eggs
Look at the name to know the nationality, the food in Spain. Actually, I think a lot of southern European dishes are quite similar, with tomatoes and bell peppers often used, but this dish has a Spanish flavor with the addition of chorizo. The recipe is for three servings. 1 teaspoon = 5ml, 1 tablespoon = 15ml

Ingredients collection, olive oil and salt are not in the picture.
Spicy sausages can be replaced with other sausages or bacon for a different flavor. I also added a slice of ham.
Crushed tomatoes can be chopped either canned or fresh.
Parsley depends on personal preference, but not to. -
Food handling. Finely slice the onion, finely slice the bell pepper, shred the ham slices, and mince the garlic.
Originally, the spicy sausage had to be cut into pieces, but I didn't cut it, because the baby doesn't eat spicy, and if you don't cut it, the whole dish won't be very spicy. -
Heat the olive oil in a pan over medium-high heat, and sauté the shredded onion, spicy sausage, and shredded ham until the onion is soft, about 5 minutes.
In the meantime, preheat the oven to 200 degrees. -
Saute the bell peppers until tender, about 3 minutes.

Add minced garlic and smoked paprika, stir-fry a few times and mix slightly.

Add chopped tomatoes, season with salt, stir-fry evenly, reduce the heat, and simmer for 10 minutes until the sauce is slightly thickened, as shown in the picture.

Put into a baking bowl, dig three pits with a spoon and beat in the eggs.
You can also use a pot that can go directly into the oven to stir-fry at the beginning, and wash less baking bowls~ -
In the oven, bake until the egg whites are solidified, about 10 minutes, and if the egg yolks are cooked, add another minute or two.

Bring out of the oven, sprinkle with chopped parsley and add a tablespoon to each person's bowl.

Toasted slices of bread, dip and eat, tsk!
