Black tiger prawns thaw naturally. Pour the water clean. Marinate in light soy sauce, cooking wine, black pepper, a pinch of sugar, and a pinch of oyster sauce for 15 minutes.
Pour clean water. Sprinkle with a little starch. Grab it. Let the shrimp absorb a thin layer of flour. Remove from the frying pan, pour in the black tiger prawns, and fry over medium-low heat until golden brown. Flip to the other side with the clamps. Fry until golden brown. -
Add the garlic slices. Close the lid. Simmer on medium-low heat for two minutes.

Finish with a handful of chopped green onions. Turn off the heat and simmer for a minute. Serve on a plate.
