The simple ingredients of the leek box are healthy and delicious, and after many attempts, it can finally be stably output.

Wash the leeks and dry them as much as possible before cutting them into small pieces

Beat the eggs with salt and fry them in a pan, let them cool and chop them (I cut them a little too much this time)

Add an appropriate amount of salt to the flour, add hot water or boiling water, stir into a ball, and let it sit for a while to allow the flour and water to combine. (The ratio of flour to water is about 2:1, the dough is soft, I used 60 grams of flour and can make 3 boxes, each box weighs about 30 grams)

Time for the dough to rest and mix the filling: first put oil in the leeks and mix evenly (more oil should be used to wrap each slice of leeks), then add salt and mix well, and finally add eggs and mix well.

Divide the dough into about 30 grams and roll it out into a circle

The mixed stuffing is placed on top of the round dough

Fold the dough in half on both sides

After the pan is heated, pour a small amount of oil, put the oil in the box when it is warm, cover the pot, and heat over medium-low heat. Turn over after about 1 minute to 1 1/2 minutes, repeat two to three times.
