Putian special snack - Jin Kueh
Jin Kueh (Xinghua Pinghua dialect: ging-gôi) is a famous spot of the folk of Puxian in Fujian, and the main offering of food during the Midyear Festival. The golden cake is sticky and soft, elastic, not cut with a knife but with a thread, and has an alkaline fragrance. Folk song cloud: "Eleven and twelve, Jin Kueh tastes; Thirteen and fourteen, pick and choose. From the ninth day of the first month, every family is busy making "mint cake" and "golden cake", as the saying goes, "on the ninth and tenth days of the first month, the golden turtle (golden cake pulp) is dripping". On the thirteenth, the ancestors are sacrificed, commonly known as "picking up the mother", which lasts until the sixteenth, and is commonly known as "sending the mother". The seventh and half months of the lunar calendar are the traditional mid-year festival in China, every "half of the seventh month", that is, the glutinous rice is soaked in water and ground into thick rice milk, made by adding an appropriate amount of edible alkali, and the shape is like a disc after steaming, and the color is golden, so it is called "golden cake".
