  • 1/2 pound ground pork (or chicken, shrimp, or beef, depending on your preference)
  • 1 cup shredded cabbage
  • 1/2 cup shredded carrots
  • 1/2 cup mushrooms, finely chopped (optional but adds great texture)
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • Oil for frying (vegetable oil or peanut oil work best)

While the list might seem a little long, most of these ingredients are pantry staples, and once you get the hang of making egg rolls, you can experiment with different fillings and sauces to make the recipe your own.

2. Prepare the Filling

Now that you have your ingredients, it’s time to prepare the filling. The first step is to cook your protein. Heat a large pan over medium heat and add your ground pork (or any other protein of choice). Cook it until browned, breaking it up into small pieces as it cooks. If you prefer a vegetarian version, you can skip the meat and use tofu or just load up on more vegetables.

Once the protein is cooked, drain any excess fat and add the garlic and ginger. Let these cook for a minute until fragrant. Then, add the shredded cabbage, carrots, and mushrooms (if you’re using them). Stir everything together and cook for about 3-5 minutes, until the vegetables are tender but still slightly crisp.

Next, stir in the soy sauce, oyster sauce, and sesame oil. Season with salt and pepper to taste. Keep cooking the mixture for a few more minutes to let the flavors meld together. Once everything is cooked, remove the filling from the heat and let it cool down a bit. It’s essential to let the filling cool so that the egg rolls don’t become soggy when you wrap them up.

3. Wrap the Egg Rolls

Now comes the fun part – wrapping the egg rolls! Lay one egg roll wrapper flat on a clean surface. The wrapper should be positioned like a diamond, with one corner pointing toward you. Spoon about 2-3 tablespoons of the filling onto the center of the wrapper, keeping it close to the bottom edge. Be careful not to overfill, as this can cause the wrappers to tear.

Next, fold the bottom corner of the wrapper up over the filling, tucking it tightly. Then, fold in the left and right corners toward the center, creating an envelope shape. Finally, roll the egg roll up tightly from the bottom to the top, sealing the edge with a little water to help it stick. Repeat this process with the remaining wrappers and filling.

4. Fry the Egg Rolls

Once all your egg rolls are wrapped and ready, it’s time to fry them to golden perfection. In a large pan or wok, heat about 2 inches of oil over medium-high heat. The oil should be hot enough that a small piece of bread or a scrap of wrapper bubbles when placed in the oil. I usually test the oil by dropping in a small piece of the egg roll wrapper first.

Carefully lower the egg rolls into the hot oil, a few at a time, being careful not to overcrowd the pan. Fry them for about 3-4 minutes, turning occasionally, until they are golden brown and crispy on all sides. Use tongs to remove the egg rolls from the oil and place them on a paper towel-lined plate to drain excess oil.
