My husband and I ate lunch at Ruby Gin today. Definitely a wonderful lunch and worth going. I would absolutely say that it’s pretty authentic. We ordered the Lumpia, Sisig with an egg and upgraded to the pancit for the side and the Bulalo soup. Everything was amazing. If you get the egg just on top of the Sisig, be prepared it’s raw, but the cast iron it comes on is hot and once you mix it cooks. I’m definitely fine with raw egg but someone else might not be. Lumpia was amazing. The soup my husband got was a little bland for my liking but I believe it’s supposed to be a mild soup. I loved the pot it was served in! Kept your soup hot. Service was excellent!!! We had Asia for our server and I absolutely loved her! I can’t wait to go back and try more dishes!

Went for lunch on a Saturday and the food was fantastic. Ive been a few times and the food is very hit or miss sometimes, but this time it was great. I went with a group, so we ordered a bunch of lumpia as an appetizer. The lumpia was ok, but the entrees were what were amazing. We got 3 soups to share as a table, Mami, bangus sinagang & bulalo. The bulalo was the best of them all with the sinagang following close behind. Others at the table ordered beef & broccoli , and the daily specials which came with adobo , pancit and lumpia. No complaints from anyone and the fresh coconut was the icing on the cake. Prices were very reasonable here and I would definitely recommend it to anybody looking for Filipino food in the Pensacola area.

The best Filipino dining experience yet! The staff were incredibly friendly. The chicken adobo was the best I’d ever had. Truly delicious experience!

I've been living in the Philippines for a while now and came back to visit family. I got an itch to eat some Filipino food, and this place didn't disappoint. The food is definitely catered to an American palette. The sisig tasted fairly authentic and even had the hot chili peppers in it, although the meat was more like chopped up lechon kawali instead of pig's face. The pancit canton was good, but rice noodles would have been better instead of the thick, almost spaghetti-like noodles, but maybe im thinking of pancit palabok. The sinigang was very tasty and probably my favorite dish I had. The chicken adobo was disappointing. The sauce just didn't have the strong taste you get in the Philippines, but to average Americans like my parents, they enjoyed it. I asked for a side of rice, but I wasn't surprised when I received what could have been a whole pot. I would have loved to have some calamansi with the food.
